Cooking and preparation time: 20 minutes
You will need: (2 servings)
- A medium sized pepper (I used yellow for some colour)!
- 6 cherry tomatoes or 2 large tomatoes
- 5 medium mushrooms
- Half of a medium sized onion
- 60g bulgur wheat
- Light butter
Steps:
- Measure out 320ml of water and boil in the kettle.
- Slice the onion, mushroom and pepper into small squares as seen above and slice the tomatoes into halves or quarters.
- Weigh out 60g of bulgur wheat and place into a saucepan. The water should have boiled now, so add all 320ml to the saucepan and put on a medium heat on the hob, stirring frequently with a wooden spoon. Continue to do this until all of the water has been completely absorbed, which should take around 14 minutes, and then take off of the heat.
- Take a saucepan and place on a medium-high heat on the hob. Add a knob of light butter (you may also need a glug of oil if the pan becomes very dry). Once the butter has melted, take 3 frozen Quorn sausages and add to the pan. Set a timer for 14 minutes. After about 8 minutes, you may wish to use a knife to cut the sausages in half as this will help them to cook through and it will be easier to tell if they are done.
- Continue to stir the bulgur wheat and Quorn sausages. After around 10 minutes, you should take another frying pan, add a knob of butter and place on a high heat on the hob. Once the butter has melted, add your sliced ingredients into the pan and stir continuously. On a high heat, the ingredients should only take around 4-5 minutes to become softer and golden. After this time, all of your food should be cooked, so remove all pans from the heat.
- Remove the sausages and carefully, as they are hot, use a fork and knife to slice the sausages into slices. Add the bulgur wheat, sausage slices and vegetable slices into a large bowl or serving dish and mix the ingredients evenly. Place half of the ingredients into a lunch box and cover with kitchen paper to cool before refrigerating, and place the other half on your plate to serve.
