Healthy hummus pizza!


Now I saw something similar online about using hummus instead of the traditional tomato layer on pizza so I thought I'd give it a try and make one of my favourite wrap pizzas. This meal was actually so tasty! I definitely prefer it to the tomatoe base and it's healthy an nutritious too! Unfortunately I didn't have any cottage cheese or light mozerella, which would've completed the meal! But anyway, if you like pizza and you're a hummus-lover like me, you should definitely try this recipe! It's really quick and easy to make too!

Cooking and preparation time: 10 minutes

You will need:

  • A wrap base
  • Two tablespoons of sweet corn
  • A small pepper
  • Half of a small red onion
  • 3 tablespoons of hummus
  • 4 cherry tomatoes or one large tomatoe
  • 4 baby mushrooms
  • 1-2 tablespoons of cottage cheese
  • A knob of light butter

Steps:

  1. First preheat the grill to the maximum heat and leave the oven door agar.
  2. Then cut the pepper and onion into small squares. Slice the tomatoes and mushrooms into thin slices. Add a knob of light butter to a frying pan and place on full heat in the hob until the butter has melted.
  3. Once the butter has melted, add the onion, mushroom, tomatoe and pepper and fry until softer and golden for around 5 minutes. Keep stiring the vegetables every now and then. Whilst the vegetables are frying take your 3 tablespoons of hummus and smooth it evenly onto the wrap base, leaving about 1.5 inches around the outside for the crust.
  4. Once the vegetables are finished frying, remove from the heat and use a spoon to sprinkle them evenly over the hummus on the wrap. Then add the sweet corn evenly too. Once covered, use a teaspoon to add cottage cheese (or your choice of cheese) to any area which is not covered by vegetables to fill all of the gaps. Do this until there are no gaps on the pizza or until you have used your  2 tablespoons (whichever comes first).
  5. Then place your pizza onto a pizza tray and place on the highest level in the oven under the grill for about 3 minutes (this time depends on how long the grill has been preheated for so keep and eye on the pizza and if you notice the edges turn golden-brown then your pizza is probably done.
  6. Remove from the oven and place on a chopping board to cut into slices using a pizza cutter.
  7. Season to taste and enjoy!
